It catalyses the hydrolysis of dextran, a complex branched polysaccharide composed of glucose molecules. By breaking down dextran into smaller oligosaccharides and glucose, dextranase has a variety of applications across multiple industries. The presence of dextran increases viscosity and obstructs sugar processing; ECOSUGAR-D removes it.
